WHere is an easy interpretation of a drink featured on our latest cocktail list. This is a large-volume premix which is bursting full of flavours associated with Christmas time, which makes it perfect for a festive gathering. Any leftover syrup to use in brunch beverages, sweets, or for another batch of bikinis.
Bikini Recipe
Makes enough for 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Combine every items into a pan, bring to a light boil, stirring so the sugar melts. After that, turn off the burner and leave to cool fully. Pour to a sealable bottle, seal and refrigerate it in the refrigerator, where it will keep for up to a month.
To make Batch Mix: Mix all the spirits and syrup into a sizeable container, leave to sit for 60 minutes, then filter it best through cheesecloth, so it's completely strained.
When ready to serve: Add 85ml from the cocktail base into your cocktail shaker packed with ice, and agitate carefully for one minute to cool it down. Filter to a chilled martini glass or similar, decorate with the cranberries and finish with a light spray with the mandarin essence over the drink.
